Sambhar powder is a blend of spices used in making sambhar, a popular South Indian lentil stew. Here’s a basic recipe to make it:

Ingredients:
1/4 cup coriander seeds
2 tablespoons cumin seeds
2 tablespoons chana dal (split chickpeas
2 tablespoons urad dal (black gram)
1 tablespoon fenugreek seeds
6-8 dried red chilies (adjust for heat)
1 teaspoon black peppercorns
1 teaspoon mustard seeds*
1/2 teaspoon turmeric powder
1/4 cup dried curry leaves (optional)

 Instructions:

1. Dry Roast Spices:
   - In a dry skillet over medium heat, roast the coriander seeds, cumin seeds, chana dal, urad dal, fenugreek seeds, and black peppercorns separately until fragrant. 
   - Be careful not to burn them. 

2. Roast Chilies:
   - Roast the dried red chilies separately until they become crisp.

3. Cool and Grind:
   - Allow all the roasted ingredients to cool completely.
   - Grind them together in a spice grinder or blender to a fine powder.

4. Add Turmeric:
   - Mix in the turmeric powder and grind briefly to combine.

5. Store:
   - Transfer the sambhar powder to an airtight container and store it in a cool, dry place.

This homemade sambhar powder will add a rich, aromatic flavor to your sambhar or other dishes.
